Dinner starts with snacks such as scallop with citrus fruits and tuna with ginger and caviar, followed by a starter of crab and shrimp with moqueca sauce. The fish course is sea bass with Trás-os-Montes cusks, seaweed and bivalves, while the meat course is black pork with carrots and Madeira wine. To finish, a chocolate dessert with tonka beans and raspberries, followed by coffee and petit fours.
